Barrell Craft Spirits to a Open Distillery in KY
We’ve begun work building our new distillery in Louisville, KY! Veteran distiller and distillery consultant Tripp Stimson is coming on as our Master Distiller and Director of Distillery Operations. He’ll lead the distillery building initiative and be responsible for developing new product formulation. Tripp was previously a scientist at Brown Forman and Master Distiller at Kentucky Artisan Distillery. He’s consulted in the craft spirits industry for the past several years in areas ranging from fermentation to distillery design, and built the first malting operation in Kentucky in 2016. We’re very excited to have him as a part of our team.
Our plan is to begin producing whiskey and bourbon by the end of 2017, with the goal of producing 1,000 barrels in the first year of operation and 2,000 in the second year. Once they’re aged, the spirits will be added to our product portfolio. We will continue to seek out and select barrels of great tasting, high quality spirits, which will be the main basis of our portfolio. As always, we want to craft products that explore the unique effects of different distillation methods, barrels and aging environments, and bottle them at cask strength. It's a 10
Barrell Bourbon Batch 010 has gotten some great press from whiskey enthusiasts. This 8 year straight bourbon whiskey was distilled in Indiana and aged in Michigan, then bottled in Kentucky at 122 proof (75% corn, 21% rye, 4% malted barley mash bill). The combination of the high rye Indiana bourbon aged in Michigan produced a lush and soft bourbon that will please both new and experienced bourbon drinkers. Tasty Whiskey says “this is unimpeachably great bourbon - easy ‘A.’ Remarkably smooth for 60% ABV at cask strength, but packing plenty of interesting flavor, particularly on the midpalate and finish… this is legitimately one of the best bourbons I've had all year… a ‘finesse’ bourbon in the style of most Four Roses LE bottlings as opposed to a ‘power’ bourbon like Booker's or George T. Stagg. … fruitier, softer, and more rounded.” Bourbon Scout rates it an A+, calling it “one of the best bourbons I have ever tasted.”

Batch 009 continues to impress as well. Axis of Whisky says “I’d love to know what Joe Beatrice’s secret is to picking barrels, because this Barrell Bourbon Batch 009 is absolutely stunning. I’ve enjoyed most of Barrell’s prior bourbon batches, but this one is my favorite thus far…. On the nose are warm caramel and deep oak. The palate adds butterscotch, vanilla, baking spices, and buttered toast with jam. The beautiful finish reminds me of Brach’s butterscotch candy. Overall, BB 009 has an excellent balance of rich oak and candied sweetness.”
We’re turning it up to 11
Coming to the market in March - Barrell Bourbon Batch 011, a straight bourbon whiskey, distilled and aged in Tennessee and then crafted and bottled in Kentucky. Aged for 6 years in American white oak barrels it was then bottled at 114.8 proof. This batch is the culmination of a 2 year long project of holding back barrels that fit into a specific, flavor profile. Warren Bobrow, aka the Cocktail Whisperer, describes it: “piping hot cornmeal Hush Puppies liberally sprinkled with confectioners’ sugar. Notes of Cavendish tobacco and bourbon barrels give way to a lush cherry preserves aroma” and the palate as “a sharp burst of corn soufflé dissipates into honey graham cracker crusted pecan pie tartlets. The 114.8 proof provides for a multi-minute finish of hot stone fruit crumble.” Warren is the author of the tasting notes and cocktail recipes on our website.
Whiskey and rum and rye oh my
Barrell Whiskey 004, available in all markets, was distilled in Indiana and Tennessee and aged for 11 years in used American oak barrels, then finished in rum casks and rye barrels and bottled in Kentucky at 120.6 proof. Here's how we crafted Whiskey 004: We selected barrels of a Tennessee bourbon and an Indiana whiskey for this batch. Separately, the two whiskeys were finished in either rum casks left over from Barrell Rum Batch 001 production, or rye barrels to add structure and spice. We made four combinations: Tennessee whiskey finished in rum casks, Tennessee whiskey finished in rye barrels, Indiana whiskey finished in rum casks, and Indiana whiskey finished in rye barrels. We then selected and blended a number of barrels of both whiskeys with both finishes to create something really special.
