NEW PAL COCKTAIL
The New Pal
The classic Old Pal cocktail is closely related to the Boulevardier, only instead of sweet vermouth it uses dry. Inspired by its bracing, bittersweet character, Head Bartender Pete Stanton of Ai Fiori NYC created the New Pal as a way to showcase the fruity tones of Barrell Armida.
This herbaceous, fruit-forward cocktail features dry white vermouth infused with fresh strawberries, which highlights the orchard and red fruits found in Armida. A few dashes of aquavit adds another fresh, herbal accent to the bass notes of the amaro and pear brandy finished bourbon.
● 1 ½ ounces Barrell Armida
● ¾ ounce strawberry-infused dry white vermouth*
● ¾ ounce Campari or other red aperitivo
● 4 dashes aquavit
● Lemon peel, for garnish
Add all ingredients except lemon peel to a mixing glass and fill with ice. Stir well, then strain into a chilled Nick and Nora glass. Garnish with lemon peel.
*Strawberry-infused dry white vermouth
Add a dozen hulled, quartered fresh strawberries and one 750ml bottle of dry white vermouth to a glass container, and store in the refrigerator for 24 hours. Strain solids, and store in the refrigerator.
