Our blending team embarked on a journey to create our first one-of-a-kind Full Proof Bourbon. We began by meticulously selecting individual barrels and cutting each one to its original barrel entry proof. Through careful blending, we harmonized these distinct elements into a bold full-flavored masterpiece, resulting in an exceptional blend with notes of hazelnut, chocolate, tobacco and leather.

FLAVOR NOTES

The aroma of raisins and peanuts stands atop a foundation of solid oak. Deep, indulgent flavors of mint dark chocolate and bold coffee mingle with bacon and pancakes leading to a rich and oily palate. Water completely transforms this bourbon, unleashing gooey brownie batter, coconut macaroons, and bananas foster.

Neat

Appearance: Burnt sienna.

​

Nose: The barrel is front and center, with a very direct aroma of wood jumping out first. It’s the grain that brings the complexity, contributing tobacco, black peppercorn, and patchouli. Grilled mushroom, lanolin, and leather showcase rye’s savory side. There’s just a hint of fruit, notably rhubarb, raisins, and pineapple.

Palate: Quite complex with hazelnut latte and autumn leaves rounding out the flavor of an old oloroso sherry. The tobacco from the nose reappears alongside chocolate nonpareils and a touch of gunpowder. Warm cola brings a syrupy richness to a texture enhanced by sandy tannins and an oily quality that reinforces a note of bacon.

Finish: Purple plum and apple cider mark an unexpected fruity turn. They’re joined by sage, peppermint, and a bit of cigar ash which ultimately give way to the lingering flavor of pastis.

With a few drops of spring water

The aroma heads straight for the bakery, leading with brownie batter, tres leches cake, and maple syrup. Curiously the palate goes in the opposite direction, growing earthy and even waxy. Spices stand in sharper relief, notably juniper berry, tarragon, and lemon zest. Creamy bananas foster overwhelms the finish.
